Rico, who has lived in the United States since 1990, said the name comes from the Mexican word for cowboy, and like typical hard-working cowboys, he and Juana are working frantically to get everything in place to open, including painting the exterior a warm shade of red with white trim.

“I get some sleep,” he quipped.
He and Juana have lived in La Crosse for about 10 years and they have two children attending La Crosse schools.
Noe and Juana have partnered in other restaurant ventures, but this is the first time they have owned their own restaurant. Noe has extensive cooking experience that began in his homeland and he has since been in the restaurant business in southern U.S. states like Georgia and North and South Carolina. He will be the master chef at El Charro.
Patrons can expect a full array of Mexican favorites with steaks, seafood and chicken dishes at great prices, Rico said. The restaurant will be open seven days a week and will feature a lunch special and dinner special every day.
“We have fresh food every day,” Rico said. “This is real Mexican food.”
While the liquor license hasn’t been approved yet, the restaurant also has a full bar.
“We want people to come here to have fun and enjoy good food,” Rico said. “We want a family to feel good when they come here. We have the best quality food and service. And the prices are pretty good.”
The restaurant, which can seat 180 to 200, also offers carry out, but no delivery service.
